If there’s one thing I always have on hand, it’s frozen berries. Their primary use is smoothies or in place of drink diluting ice but when I want a quick dessert, I don’t think twice to tumble them into a baking dish, add a few pantry staples and toll the whole thing in the oven for a Quick Mixed Berry Crumble. Do I feel the least bit of guilt for using frozen fruit? Absolutely not, and neither should you.

Here’s the thing: berries are really hit and miss and out of season they are expensive and often a bit disappointing. Using frozen means you get consistently great fruit that was frozen at its peak and your results are easy to predict. A bit of sugar, and other ingredients from your pantry and you’ll have this Quick Mixed Berry Crumble assembled and baked in less than 90 minutes. That’s what I call easy.

Quick Mixed Berry Crumble

preheat your oven to 350°

4 cups frozen mixed berries

2 Tbsp all purpose flour

3/4 cup sugar

1 tbsp vanilla extract

Toss the frozen fruit with the flour, sugar and vanilla. Pour into a buttered 9 inch pie plate or similar sized oven safe dish.

 

For the crumbly topping, combine the following ingredients in a medium bowl and mix well so all ingredients are dampened.

2 cups rolled oats

1 cup shredded coconut

1/2 cup sugar

2 tsp cinnamon

1/2 tsp grated nutmeg

1/2 cup (1 stick) butter, melted

 

Top the fruit with the crumble and gently pat into place. Bake at 350° for 60 minutes or until bubbling and juicy at the edges and golden on top. Serve warm or at room temperature.
