I’m such a sucker for smoked foods. Nuts, cheese, meat, fish, if it’s been cooked over fire or better yet treated to a woodsmoke sauna and fully indoctrinated with smoky goodness, I want to eat it. So you might imagine my joy when my friend Andrew started Wholly Smoked and started churning out amazing small batch smoked foods for friends, family and local markets and select retail establishments. I’ve happily taste tested numerous products and watched his smoking skills grow and gain finesse.

When Andrew handed me a jar of his Mesquite Smoked Tomatoes, neatly adorned with a natural raffia bow and a recipe card for tomato soup I new I wanted to try to make something awesome with these smoky red gems. Tart-sweet and robustly smoky, they are a cook’s dream. Pasta? Salsa? Chicken cacciatore? Bruschetta? Wait … What about a cocktail? With the hipster-approved addition of bacon to Caesars and Bloody Mary’s everywhere, why not take it a step further? Thus, the Smoked Tomato Caesar was born.

The result? A spicy, smoky, smooth as silk and oh so savory cocktail that goes down almost too easily and makes as much sense alongside your Sunday eggs Benny as it does with a steak. Long story short, upgrade your fave tomato cocktail with some seductively smoky Mesquite Tomatoes from Wholly Smoked and take your summer sipping to a whole new level.

Smoked Tomato Caesars

3 cups tomato juice
1 cup vodka
1 cup clam nectar
1/2 cup Wholly Smoked Mesquite Tomatoes, puréed
1/4 cup fresh grated horseradish
2 Tbsp Tabasco or other vinegary hot sauce like Frank’s
2 Tbsp Worschestershire sauce
Salt and pepper to taste

Suggested garnishes: cherry tomatoes, olives, lemon wedges, pickled beans

Combine all ingredients in a pitcher with ice. Rim chilled glasses with salt and pepper. Add ice and pour over the Caesar. Garnish as you wish.
